I don’t know what type of weather you’re having today, but here in Sweden it’s raining – again.. not the kind of weather you want to kick of May with. But no worries, this means it’s a perfect day for a cup of tea and some freshly baked brownies – and some Netflix. 🙂

Having a good brownie recipe is a must in every kitchen. You can do so much more with it than you think. This is my favorite and today I’ve added a classic swedish candy called Polly and some dark, mint flavored chocolate.

About 12 pieces
Ingredients
100 g chocolate
100g butter
50 g chopped walnut kernels
150 g of Polly
2 eggs
200 ml granulated sugar
150 ml flour
1 teaspoon baking powder
Preheat the oven to 175 degrees. Grease a roasting pan about 20 × 30 cm. Melt butter and chocolate over low heat and let cool slightly. Mix cookies, nuts, sugar, eggs, flour and baking powder firmly into the melted chocolate. Spread the batter into the baking tray and spread throughout the gingerbread on top. Bake in the oven for about 20 minutes. Let cool slightly, then cut into pieces and serve with whipped cream.
